  1. 1/2 stick of butter

  2. 3 medium to large yams (peeled and sliced 1/4-inch thick circles

  3. 1/4 cup brown sugar (can be brown sugar substitute

  4. 2 cups hot water

  5. 1/4 teaspoon vanilla

  6. 1 teaspoon cinnamon

Candied Sweet Potatoes

In a large skillet, melt butter on high until it turns lightly brown. (Do not burn.) Arrange yams around skillet. Brown on both sides. In a bowl, mix water, brown sugar, cinnamon and vanilla. Pour over yams and bring to a boil for approximately 20 minutes. Do not cover to allow water mixture to caramelize to a sticky consistency. Serves 4.
