

‣2 1/2 pounds each pork tenderloin
‣1 tablespoon olive oil
‣1/4 teaspoon kosher salt
‣1/2 teaspoon coarse black pepper
‣1/2 teaspoon ground cumin
‣1/4 cup bourbon
‣1/4 cup brown sugar
Pork Tenderloin with Bourbon Sauce
Preheat over to 425 degrees. Rub salt, pepper and cumin over pork tenderloin. In a large skillet, heat olive oil on high heat. (Watch carefully to not let it burn.) Quickly sear tenderloin, browning on all sides to seal in juices. Remove immediately and place in roasting pan. Mix bourbon and brown sugar together and pour over pork tenderloin. Bake for 10 to 15 minutes covered with foil or lid. Remove cover and continue to bake for an additional 10 to 15 minutes. Remove from oven when center reaches 160 degrees Fahrenheit. Let tenderloin cool for about 10 minutes before slicing. Pork will be slightly pink inside. Serves 6.
