

‣1 cup Cafe DuMonde Beignet Mix
‣1 cup water
‣1 teaspoon sugar
‣1/4 teaspoon salt
‣1 teaspoon cinnamon
‣1/4 cup chopped pecans
‣12 medium shrimp, peeled and deveined
‣48 ounces canola oil
‣1/2 cup confectioners sugar (set aside)
Shrimp Beignets
Combine all the above dry ingredients except for confectioners sugar. Gradually stir in water until batter is stick, but not soupy. Fold in pecans and shrimp. Heat oil in a deep fryer until hot. Spoon in shrimp with batter mixer one shrimp at a time. Fry until golden brown. Drain on paper towel. Dust with confectioners sugar. Try not to eat them all before your guests arrive.
