Valcooks! Chicken Chili

  1. 1 large onion chopped

  2. 3 cloves garlic minced

  3. 1 large green pepper chopped

  4. 1 tablespoon fresh basil chopped

  5. 1 teaspoon fresh sage

  6. 1 teaspoon fresh thyme

  7. 4 tablespoon olive oil

  8. 1/2 pound chicken chorizo sausage ground

  9. 3 pounds fresh ground chicken breast

  10. 2 tablespoon Hershey Cocoa powder (unsweetened)

  11. 1 1/2 ounce Gravy Master browning sauce

  12. 1/4 cup mesa flour

  13. 14 cup chili powder

  14. 1 1/2 teaspoon kosher salt

  15. 1 teaspoon coarse ground pepper

  16. 2 tablespoon Makers Mark Bourbon Whiskey

  17. 36 ounce chunky tomato sauce

  18. 4 12-ounce cans red kidney beans

In 10-quart pot, heat olive oil on medium heat. Saute onion, garlic, green pepper and spices (basil, sage and thyme) until slightly brown. Stir in sausage. Add ground chicken breast. Stir in browning sauce until sauce and chicken are fully blended and chicken is brown. Constantly stirring, add cocoa, chili powder, salt, pepper and mesa flour. Slowly stir in tomato sauce, then kidney beans. Continue to stir for 1 minute. Add bourbon. Bring to a boil then simmer for about 20 minutes. Makes 7 quarts.
